Not only are potatoes the ultimate comfort food, they are also packed with 60 different kinds of phytochemicals in their skins and loaded with Vitamin C. This mashed potato makeover proves that the potato can make a healthy side dish when not in the form of a French fry or covered in high-fat toppings.
Creamy Garlic Mashed Potatoes
The transformation begins by using Yukon Gold potatoes, because they are naturally creamy and buttery in flavor. Next, drop the butter and sour cream, and add heart-loving ingredients such as extra-virgin olive oil and Greek yogurt. So go ahead and enjoy this classic comfort food and leave the guilt behind.

Ingredients
4 lbs red potatoes, peeled 4 lbs Yukon gold potatoes, cleaned or unpeeled, cut into 1 ½-inch pieces
- ½ cup water
1 tsp salt, or to taste, ½ cup Parmesean cheese
- 1 ½ tbsp minced garlic (3-4 cloves)
¼ cup butter, melted, 3 tbsp extra-virgin olive oil
⅔ cup sour cream, ⅔ cup low-fat Greek yogurt
½ cup cream, ½ cup chicken broth
- ½ cup milk, warmed in the microwave, or as desired
- Salt, pepper to taste
- Minced chives for serving (optional)
Spray a 6- to 7-quart slow cooker with nonstick spray. Place potatoes in slow cooker then pour water evenly over top (if your slow cooker allows excess moisture to evaporate from the slow cooker I'd recommend adding in an extra ¼ cup of water). Toss with salt and pepper to taste, then add garlic and pour
butter olive oil evenly over potatoes. Cover and cook on high heat for 4 to 4 ½ hours until potatoes are tender when pierced with a fork (don't drain!). Mash the potatoes with a potato masher then add
sour cream Greek yogurt, heavy cream chicken broth and Parmesan cheese. Whip with an electric hand mixer until desired texture is reached, while adding in milk to reach desired consistency. Serve warm and with minced chives if desired.
