Simple and Healthy Bean Salad Recipe

This super-healthy salad is perfect for making a large batch and then putting it in small containers as a lunch side!

1 cup shelled edamame (these are soy beans) 
1 can each of low-salt black beans, white northern beans, and garbanzo beans, rinsed and drained well 
1 red pepper and 1 yellow pepper, chopped 
1 cup diced grape tomatoes 
1 avocado, chopped 
Chopped green onion to taste 
Chopped cilantro or parsley to taste

1/4 cup olive oil 
1/8 cup red wine vinegar 
1/8 cup balsamic vinegar 
1 Tbsp. sugar 
Salt and pepper to taste

In large bowl, add all ingredients.
In separate bowl, mix dressing ingredients thoroughly.
Pour dressing over bean mixture and blend well.
